Attendance is mandatory. The expected class format is in-person. To confirm attendance, each student will have to fill out a brief Google Forms quiz or a sign-in form, which will be provided in lecture.

There will be three short assignments for students. After 4 weeks of class, we will require a 1-page report on a fermented food traditional to a culture or region of the student's choice. For our midterm, we require students to make, photograph, and briefly (1-2 paragraphs) summarize a dish reflecting what has been taught in the class. For the final assignment, students will repeat the exercise performed form the midterm.

Students will be accepted on an application basis, with slight emphasis given to seniors or other graduating students. Applications will be open until Wednesday, September 9th.
