This course is designed to lead students in exploring mindfulness via connections between Tao and plant-based meals. Students are encouraged to apply the teachings into their daily lives for their mental, physical, and spiritual health. Students will be encouraged to make more home cooked meals from scratch and be able to identify their nutritional breakdown. Students will experiment with different plant-based ingredients, at the same time, learn their connection with the human self. Students will be able to apply these mindfulness philosophies to other areas of their lives if they choose.
Classes are scheduled weekly via Zoom. Lecture topics would focus on areas of physical, mental, spiritual health via Tao philosophy, plant-based cooking, and nutrition.
Attendance requires students to tune in live with a video camera on. They will need to reach out beforehand if there are technical issues. There will be a remote option for those who want to participate but can't due to time conflict. There will be homework and written reflections on the lecture materials.
Asynchronous Attendance allowed but there will be make-up assignments. Students are responsible to make up any work/lecture that they missed.
